
I was so proud of myself for making delicious carrot cookies with orange frosting which take forever to make. They are very good, but without question the best part is the frosting. After finally finishing making and frosting the cookies, I was ready for a quick shower. Meanwhile my two year old daughter Melanie climbed up on a chair and dug the frosting out of all the cookies and dropped, crumbled or stepped on most of the remnants. I came upstairs clean and excited to eat a cookie, only to find nothing but pitted remnants and crumbs everywhere. She will make sure I never get lazy. I have plenty to do.
Carrot cookies
- 1 C shortening or soft butter
- 2 eggs
- 2 C flour
- 1/2 tsp salt
- 1 C mashed cooked carrots
- 2 tsp baking powder
- 3/4 C sugar
- 3/4 C shredded coconut
Orange butter frosting
- 3 Tbsp butter or margarine
- 2 tsp grated orange peel zest
- 1 1/2 C powdered sugar
- 1 Tbsp orange juice
Preheat oven to 400. Mix shortening. Sugar, eggs, and carrots. Blend in flour, baking powder, and salt. Stir in coconut. Drop by teaspoons onto a lightly greased baking sheet. Bake 8-10 minutes or until no impression remains when touched lightly. Immediately remove from baking sheet. Cool and frost with orange butter frosting.
